Remember the recipe that looks something like this . . .
I was determined to make a portable version using the flavors found in my Broccoli and Beef Thai Stir-Fry. I came up with the following lunchbox-friendly concoction Thursday.
Thai Peanut Salad with Chicken Roll-ups
I made the salad by topping broccoli slaw with green bell peppers and baby carrots. Two tablespoons of Trader Joe’s Satay Peanut Sauce mixed with one teaspoon sriracha; 1/2 teaspoon spicy brown mustard; and some spices made for the perfect dressing. Spices included garlic powder, black pepper and chili powder.
To make my side, I rolled 1/2 ounce of cheddar cheese into each of my two thick slices of Boar’s Head EverRoast oven-roasted chicken breast. Gotta get the protein in there somewhere! 😉 I think an orange and some lightly salted almonds made their way into my lunch too, but I couldn’t find a picture to prove it.
This lunchbox version of my favorite Thai dish was still quite tasty, even though it wasn’t piping hot and featured chicken instead of beef. Let’s be honest – anything covered in TJ’s Satay Peanut Sauce tastes awesome.You could even up the peanut and Thai flavors by adding peanut pieces and scallions to the salad.
