First of all, I want to thank everyone who congratulated me on being accepted into the UF Levin College of Law! I’m truly grateful for everyone’s support.
I’m not sure I’ll be a “double Gator” next fall because I’m still waiting on admissions decisions from schools in D.C. and the surrounding areas. Cost is a huge factor, so there’s a good chance I’ll stay in Gainesville for an additional three years because UF Law is so affordable. However, only time will tell where I end up.
Anyhoo, lots of good things have been happening on the food and fitness fronts lately too. Well, except for the epic wound I’m now sporting after doing box jumps on a plyo box that wasn’t completely level. Luckily, most of the swelling and black and blue color subsided after I put an ice pack on the wound.
Note to self – be sure the plyo box is level before jumping on it!
And just for the record, my socks are pink tie dye. There was no blood around my ankle, but I told my mom it was blood spatter, LMAO. Clearly I’ve been watching too much Dexter.

Barbecue Sauce – Stubb’s and Carolina Treet
It’s my new favorite condiment. I’ve been using both sauces as salad dressings and on my meatloaf. SO GOOD.
I buy Stubb’s at Publix but found the Carolina Treet in a Food Lion in North Carolina. My dad and I took a road trip during spring break that involved turkey burgers made in a hotel room. They turned out pretty good! I might recreate the burgers and share the recipe soon.
Speaking of toppings, I’ve found the best thing since sliced cheese – nutritional yeast. I put it on everything these days. Eggs, meatloaf, in my dip, on my giant, use-a-mixing-bowl salad . . .
And yes, it literally tastes “cheezy.” Vegans often use it as a cheese substitute, and it gives foods a cheezy flavor if you’re lactose intolerant. I buy my nutritional yeast on Amazon.
And while we’re on the topic of vegan products, let’s talk about my new favorite protein powder. This stuff is ridiculously addicting. It makes smoothies super thick and doesn’t taste artificial like most whey or casein powders. However, it boasts the same amino acid profile as the animal-based powders.
This powder also comes in a vanilla flavor and costs a bit more than traditional whey. However, I often find myself eating too much dairy and appreciate that this powder is completely plant-based.
